Allison Cortese: Dining Room Manager
Allison Cortese graduated from Johnson & Wales University where she studied Food Service Entrepreneurship and Culinary Arts. There, she followed in the footsteps of her family, longtime owners of the legendary Cortese Restaurant in Binghamton, NY (A childhood favorite of Chef Lacoste’s, in fact). Since her graduation, she has put her in-depth knowledge of the food and service industry to great use. Starting out at Gance’s Complete Catering in New York Allison served as a Prep Cook, a Corporate Designing Assistant, and On-Site Cook and Buffet Assistant. After her time there, she went on to serve as Beverage & Hospitality Manager, Culinary Manager, and Green Team & Safety Manager for Red Lobster restaurants in Maryland. Looking for an opportunity with a well known independent restaurant, she became Assistant Manager at Sam’s on the Waterfront, which ultimately led her here to RIS, where we are thrilled to introduce her to our guests and embrace her talents
